2011-10-18 make starter 1.30 l 68 f 1056 starter from ~900ml + ~400ml pressure-canned wort. Simethicone drops added. Stir-plate + foil. Fermented ~3 days until 2011-10-20. Cold-crashed, decanted, saved in a pint mason jar, foil top + rubber band in fridge.
2011-10-22 buy ingredients 3.00 gl 1.047 3g apple juice collected, treated with 3/8tsp K-metabisulfite overnight.
2011-10-23 19:45 EDT boil, end 2.00 gl 1.075 Of just the 2g of wort.
2011-10-23 20:30 EDT pitch 5.00 gl 65 f 1.060 10 drops of simethicone. 2 tsp yeast nutrient. a couple hundred ml of spent wort and a clumpy yeast cake. Cider was around 1.046.

2011-11-12 19:37 EST gravity sample 1.018 Unfortunately, this is smelling and tasting really off. Intense acetaldehyde nose, slightly sour, harsh. I don't think basic sanitation procedures for the better bottle is working out. :( Or maybe it was the crashed/delayed starter.
2011-11-20 consumed Drain pour. :(
